The interplay of aromatic spices and the pristine acidity unique to Southeast Asian cuisine unfolds with a richer, more dramatic presence befitting the evening table. The season's signature dish, the chilled capellini, features noodles gently enveloped in a cumin‑ and chili‑scented spicy sauce, complemented by a tomato base brightened with lime and fish sauce.
